Folks, I got nothin’. I’m sluggish and low energy today, and then I realized I had to make dinner when I got home. I promised myself I would not order food this week. Balls.
But I did recently go food shopping and found a lot of wilting herbs in my fridge. When I have way too much parsley or cilantro, my trick is to dump it in a food processor with some lemon juice, garlic clove, salt, pepper, olive oil (and water if it gets too chunky).
I throw whatever “pesto” sauce comes out of my processor on to some linguini (the best pasta and we can have a debate about this) and voila, a lazy yet not unsophisticated dinner.
And I feel good for not throwing away my sad herbs. I’M AN ADULT. I’M GROWN AF!
